Step 1

  1. Heat oil in a skillet over medium heat
  2. Cook onion, garlic, and ginger until softened about 5 minutes
  3. Add chickpeas, tomatoes, coconut milk, and sweet potato
  4. Bring to a boil. Reduce heat to low and simmer until tender about 15 minutes

Step 2

  1. Season with garam masala, cummin, turmeric, chile flakes and salt
  2. Add spinach right before serving
